Morning in the studio often begins with a period of observation. Before I touch a single bottle or scale, I spend a few moments with the landscape outside my window, watching the light move across the hills.
Today, a newsletter arrived from Japan – practitioners who treat the creation of seasonal confections as a total art form. Their words reminded me that in my home country, these are often described as "confections for the five senses." They are designed to evoke the sights, textures, and even the poetic resonances of a specific moment in time.
The text spoke of sowing seeds and enduring the seasons, eventually "receiving the life we are given" in the form of a single, expressive piece of art.
Sitting here in rural New Zealand, the sentiment feels remarkably close. Whether it is a confection, a painting, or a scent composition, these are small universes nurtured by the soil. It is a reminder that my work today – shaping a memory or balancing a botanical chord – is part of that same humble lineage. It is an effort to capture a fleeting blessing and share it with another.
